Romaine Lettuce Hearts with Mango, Dried Cranberries and Walnuts

I was craving something light and healthy with a bit of substance to it. So I opened up the fridge and this is what I came up with. I am very pleased at how yummy this salad turned out to be. I did not use fresh Mango’s for this, as all I had was a jar of Mango chunks that I got on sale a while back. I can’t wait to try this out with fresh Mango, but for now the Mango chunks from a jar were a perfect addition to this salad.

This salad is a variation of a classic favorite that contains spinach, dried cranberries, almond slices and mandarin oranges with a balsamic dressing.

I didn’t measure anything for this salad either, I just tossed it all together in a bowl and the picture here is how it turned out. It was delicious, so I am sharing it with you! Yum Yum!

Ingredients:

  • 1 Head of Romaine Lettuce Hearts
  • A Couple of Healthy Handfuls of Dried Cranberries (more or less to taste)
  • A Healthy Handful of Chopped Walnuts (more or less to taste)
  • Several Spoonfuls of Chopped Mango OR 1 Mango Sliced and Cubed
  • Balsamic Dressing OR Balsamic Vinegar with Olive Oil

I took the entire head of Romaine Lettuce Hearts and sliced it lengthwise in half, turned it and sliced it lengthwise again so that, from the core, it was sliced into quarters. Then I sliced across the head of lettuce down to the core. The whole process took me less than a minute and gave me the perfect bite sized pieces. Since I knew I was going to be eating the whole head for lunch, I didn’t worry about the edges of the lettuce turning brown.

The entire head of lettuce went into the bowl, topped off with Mango Chunks, Dried Cranberries, Chopped Walnuts and finished off with a drizzle of Balsamic Dressing.

This salad has a similar flavor to it as the spinach salad I mentioned earlier, but at the same time it was completely different. Different greens, fruit and nuts. It still had that wonderful refreshing taste to it with the sweet from the Mango and Cranberries contrasting the tart from the Balsamic dressing. All of that mixed with the crisp Romain Lettuce Hearts and it made the perfect lunch.

I love my new salad and will probably eat it several times over the next few days, in fact, I want another one now!
