Take It On Tuesday

This has been one long week already! After yesterdays debacle I woke up today with every intention of shaking the bad energy from yesterday. I think I did a pretty good job at it. I definitely didn’t have a great day, but was able to move forward and get things done. Homeschool was slow and steady, everyone got their work done, and in the end Wing Nut did a great job of getting caught up with his math. The poor kid will forever be behind with his math, but he sure tries hard enough. Today was a day where things clicked for him for the most part, and when they didn’t, he didn’t fall apart, and let his math get the best of him. I think we both spent today trying to move past our obstacles, and when the day ended, I know we did a great job at it.

I had big plans to get things done today – just like every day. Especially now that things are really starting to fall into place around here. So I decided to do some freezer cooking after the kids were done with their lessons. Breakfast is always the most chaotic meal of the day, so I like to have lots of easy options. I have been dying to make Breakfast Bars for weeks, but haven’t had all the ingredients all at the same time. The recipe I make is enough for 2 thick, heavy pans of chocolaty breakfast delight. Each sheet that I make is enough for all of us for several days, and I usually put the second batch in the freezer.

I was feeling like I did an awesome job, until I pulled the first sheet out and realized that they did not rise at all. Then I realized that I forgot to add the eggs. All I could do was laugh. They are a bit drier than normal, but with all of the bananas that I add, they are still fairly moist. The kids ate them up, and asked for seconds – and yes, we had breakfast bars for dinner. They are that good, and that nutritious.

Even though we were in the process of eating breakfast bars for dinner, I still made ground turkey meatloaf. Turns out it was a good thing that I forgot the eggs for the breakfast bars, because I wouldn’t have had enough for the meatloaf. Good deal. The only problem I encountered with the meatloaf was that I cooked it 75 degrees to high and didn’t realize it until it was already on my plate and a bit crispy. Again, all I could do was laugh.

Aside from ruining 2 recipes that are so easy I could make in my sleep, I didn’t get much of anything done today. I didn’t really try either, I was  happy to get homeschool lessons done.

Honey Nut’s room got set up with toys, and gate so we can hang out up there. She loves getting out of her crib and playing in her room, but all of her toys have been downstairs. When we decorated the Christmas tree and dinning room, we tied the lever doors shut to make more room and now we have an extra gate. Honey Nut was so excited this morning to get up and play in her bedroom with her brothers.

This week all I have left to organize is my studio/office space, but the rest of the house is pretty much put together so I can get back to working on my space. I also need to try to list the rest of my jewelry on Etsy. For now I would be happy to get the rest of my earrings listed. I really do have way more jewelry made than I realized.

      I would love it if you joined me for Thankful Thursday tomorrow. I will try to get it up in the morning for you. I started to write it today because I thought it was Thursday, I came pretty close to posting it a day early, lol.

    Glad Tuesday was better for you. I didn’t get a chance to post Monday but I kept thinking about you and hoping your day was getting better.
    I’ve been busy updating my hubby’s website. Then yesterday I got two more hearts to draw (that always makes me happy)….along with some sweet heart-mom stories 🙂
    S has a new speech therapist coming this afternoon…and I have another insurance nightmare looming that hasn’t actually crashed into a hellish mess yet. So kinda waiting for that to start, too.
