I use a monster size sheet pan that is almost the size of my oven, and on some days it is still not big enough for My Tribe. This is such a quick and easy side dish, and so tasty! The basic recipe is to grab some of most every veggie I currently have in the kitchen, and start there.

I tossed the chopped veggies in a bowl with some Olive Oil, and Roasted Garlic & Herb Grill Seasoning from Aldi. I marinate everything for at least 15 minutes. We love this seasoning, but it is almost always out of stock. On the rare occasion we find it on the shelves, we will buy everything on the shelf. We use this on chicken, pasta, burgers, ground turkey, ramen, eggs, and of course veggies. There are usually only a few bottles on the shelf, and we always run out before we find it again.
